By: Sepher Bashari, 16-01-2025
If you’re passionate about sustainability and reducing food waste, you need to check out HBO’s Zero Waste Chef. This inspiring series, filmed in 2021, follows chefs, producers, and food innovators around the world who are turning waste into valuable, delicious creations. We’re proud to share that Agrain was featured in the Denmark episode (Season 1, Episode 3), showcasing how upcycled ingredients can transform the way we think about food.
Denmark’s Role in the Zero Waste Movement
In the Denmark episode of Zero Waste Chef, host Diego García Vega explores how Danish innovators are leading the way in upcycling and sustainability. The episode highlights Agrain’s partnership with Nørrebro Bryghus, Jalm&B, and restaurant Amass to transform brewing by-products into something extraordinary.
Here’s how the story unfolds:
- Brewing Waste Becomes Flour: Leftovers from Nørrebro Bryghus’ beer production are upcycled into Agrain’s spent grain flour.
- Flour Becomes Bread: At Jalm&B, this innovative ingredient is baked into flavorful bread.
- Bread Becomes Dessert: Finally, the bread is turned into a stunning dessert at Restaurant Amass - featuring sourdough syrup, bread miso caramel, and roasted crumbs.
This episode beautifully illustrates how collaboration and creativity can transform food waste into high-quality, sustainable products.

The Circular Food Journey
While the IPA Beer Buns featured in the episode are no longer available in stores, their story is a powerful example of what upcycling can achieve. These buns, made with Agrain’s IPA Spent Grain Flour, were sold across Denmark in Irma, Føtex, and other retailers, proving that sustainable choices can be both delicious and accessible.
A Global Platform for Change
We’re incredibly proud to have been part of this journey and to share our mission of reducing food waste on a global platform like HBO. By turning brewing by-products into high-quality food ingredients, we’re not just reducing waste - we’re creating something entirely new.
