Breakfast rolls with 01 Pilsner Spent Grain Flour

Ingredients

12 g yeast (1/4 part of a block yeast)

8 dl cold water

700 g wheat flour

100 g 01 Pilsner Spent Grain Flour

1 tsp. coarse salt

1 tbsp. honey

Here's how

  1. Mix water and yeast in a bowl.
  2. Add the flour, salt and honey and mix with a tablespoon. The dough should be somewhat wet.
  3. Cover and let the dough rest for 6-8 hours in the fridge.
  4. Stir the dough briefly and, using two tablespoons, form approx. 18 bite-sized balls on two baking trays lined with baking paper.
  5. Bake the buns for approx. 16 - 18 minutes until golden and crispy at 220 °C (regular oven)
