Brioche buns with 01 Spent Grain Flour
Ingredients
Here's how
- Mix flour and salt.
- Heat the milk and melt the butter in it but do not boil. (Add raisins if you wish).
- Crumble the yeast into the warm milk.
- Whisk the eggs and sugar together in a separate bowl.
- Mix everything together and knead the dough in the bowl until it is shiny and firm, but still moist to the touch.
- Cover the dough with a damp tea towel and let it rise in a warm place for about 40 minutes.
- Shape the dough into buns and let them rise again under a damp tea towel. The buns should rise for approx. 20 minutes.
- Bake at 200-225 °C for approx. 15 minutes.
