Brioche buns with 01 Pilsner Spent Grain Flour

Ingredients

210 g wheat flour

40 g 01 Pilsner Spent Grain Flour

½ tsp salt

75 g melted butter

1¼ dl skimmed milk

30 g yeast

1 egg

1 tbsp sugar

Optional: ½ dl raisins

Here's how

  1. Mix flour and salt.
  2. Heat the milk and melt the butter in it but do not boil. (Add raisins if you wish).
  3. Crumble the yeast into the warm milk.
  4. Whisk the eggs and sugar together in a separate bowl.
  5. Mix everything together and knead the dough in the bowl until it is shiny and firm, but still moist to the touch.
  6. The moisture content of the dough may vary.
  7. Cover the dough with a damp tea towel and let it rise in a warm place for about 40 minutes.
  8. Shape the dough into buns and let them rise again under a damp tea towel. The buns should rise for approx. 20 minutes.
  9. Bake at 200-225 °C for approx. 15 minutes.
