Carrot cake with 02 IPA Spent Grain Flour

Ingredients

100 g brown sugar

100 g dark syrup

4 eggs

150 g melted butter

330 g grated carrots

150 g wheat flour

50 g 02 IPA Spent Grain Flour

2 tsp baking powder

2 tsp cinnamon

¼ tsp ground cloves

¼ tsp ground allspice

1/8 tsp salt

Cream cheese topping:

400 gr cream cheese

40 gr soft butter

160 gr icing sugar

1 tsp vanilla sugar

Lemon zest from ½ lemon (organic)

Here's how

  1. Grease a round cake tin (22cm in diameter) with a little butter and preheat the oven to 180 °C (fan oven).
  2. ‘Melt the butter and set it aside. Whisk the brown sugar, dark syrup and eggs together until fluffy.
  3. Add the grated carrots and the lukewarm, melted butter.
  4. Sift the wheat flour, 02 IPA Spent Grain Flour, baking powder and spices into the mixture. Add salt.
  5. Pour the batter into the baking tin and bake for approx. 30 minutes at 170 °C.
  6. Check if the cake is done by inserting a fork into the cake. If it comes out clean, it is ready.
  7. Leave the cake to cool.


Topping:

  1. Mix the cream cheese, icing sugar, butter, vanilla sugar and lemon zest in a bowl and stir until smooth.
  2. Spread over the cooled cake and the cake is ready to serve.
