Carrot cake with 02 IPA Spent Grain Flour

Here's how
- Grease a round cake tin (22cm in diameter) with a little butter and preheat the oven to 180 °C (fan oven).
- ‘Melt the butter and set it aside. Whisk the brown sugar, dark syrup and eggs together until fluffy.
- Add the grated carrots and the lukewarm, melted butter.
- Sift the wheat flour, 02 IPA Spent Grain Flour, baking powder and spices into the mixture. Add salt.
- Pour the batter into the baking tin and bake for approx. 30 minutes at 170 °C.
- Check if the cake is done by inserting a fork into the cake. If it comes out clean, it is ready.
- Leave the cake to cool.
Topping:
- Mix the cream cheese, icing sugar, butter, vanilla sugar and lemon zest in a bowl and stir until smooth.
- Spread over the cooled cake and the cake is ready to serve.
