Chocolate chip cookies with 03 or 01 Spent Grain Flour

Ingredients

230 g butter

230 g sugar

215 g brown sugar

2 large eggs

2 tsp vanilla powder

65 g 03 or 01 Spent Grain Flour

365 g wheat flour

1 tsp salt

1 tsp baking soda

1/2 tsp baking powder

200g chocolate buttons or chopped chocolate

20g chopped walnuts (or other nuts) (optional)

Here's how

  1. Combine the butter, soft brown sugar and sugar to create a soft and fluffy mixture.
  2. Add the eggs and vanilla, then thoroughly mix everything together using an electric mixer.
  3. In a separate bowl, mix together 03 (or 01) Spent Grain Flour, flour, baking powder, and salt and add to the egg, butter and sugar mixture. Mix everything thoroughly until well combined.
  4. Add the nuts and chocolate and mix gently.
  5. Use a spoon to scoop the dough into balls and place on a lined baking tray. Leave enough room between the dough balls as they will flatten as they bake.
  6. Bake for 8-10 minutes until golden at 190 °C (fan oven). Be careful not to leave the cookies in the oven too long, they should be slightly soft and chewy in the centre when cooled.
  7. Leave to cool on the baking tray and only transfer to a wire rack once they have set.
Tips

Walnuts can be substituted with other types of nuts.

If the cookies rise too much, after 6 minutes you can take them out and slap the tray onto a heat-proof surface, until they drop and crinkle. Then return to the oven and finish baking. 

If you use 03 Spent Grain Flour, your cookies will be darker and stronger in flavour compared to using 01 Spent Grain Flour.
