Overnight buns with 02 IPA Spent Grain Flour

Preparation time: 13 hours (including 12 hours of rising and 30 min in the oven)
Amount: Ca. 16 buns

Ingredients

700 ml cold water

11 dl wheat flour (630 g)

2 dl 02 IPA Spent Grain Flour

1 large handful of oatmeal (60 g)

1 tbsp salt (18 g)

1 tbsp soft honey (20 g)

1 tsp cardamom (2.1 g)

35 g yeast

1 tbsp oil (14 g)

Here's how

  1. Mix water, salt, oil, honey, cardamom and yeast in a mixer (or in a bowl and use a hand mixer).
  2. Add 02 IPA Spent Grain Flour, oatmeal and wheat flour a little at a time. Mix thoroughly for about 4-5 minutes at medium speed.
  3. Cover the dough with cling film and let it rise for about 12 hours in the fridge.
  4. Place the buns on a baking tray with a tablespoon and pour 1 tbsp of water over each bun.
  5. Bake immediately in the oven at 210 °C (fan oven)) for approx. 30 min.
Tip:

If you want a dark bun with a fuller flavour, you can use 03 Stout Spent Grain Flour of 02 IPA.
