Pretzels with 01 Pilsner Spent Grain Flour

Here's how
- Dissolve the yeast in the lukewarm milk.
- Mix 01 Pilsner Spent Grain Flour with wheat flour, salt and sugar.
- Mix the flour into the milk mixture a little at a time and finally add the soft butter.
- Let the dough rise for 30 minutes on the kitchen table under a damp cloth.
- Shape the dough into 8 long sausages (approx. 60 cm) and fold them into pretzels.
- Leave the dough to rise for a further 30 minutes on the counter.
- Next, boil the pretzels for 1 minute in water with baking soda (approx. 1 tbsp baking soda per litre of water).ring the water to the boil and carefully lower the pretzels into the water one at a time.
- Make sure to drain them well after boiling so that no baking soda foam remains on them.
- Place the pretzels on a baking tray lined with baking paper and brush them with egg and sprinkle with flaked salt or sesame seeds.
- Bake the pretzels at 180C (fan oven) for approx. 15 minutes.
