Pretzels with 01 Pilsner Spent Grain Flour

Ingredients

3 dl lukewarm milk

40 g yeast

60 g 01 Pilsner Spent Grain Flour

400 g wheat flour (preferably high protein tipo 00)

2 tsp salt

1 tsp sugar

50 g soft butter

1 tbsp baking soda per 1 litre of water

Here's how

  1. Dissolve the yeast in the lukewarm milk.
  2. Mix 01 Pilsner Spent Grain Flour with wheat flour, salt and sugar.
  3. Mix the flour into the milk mixture a little at a time and finally add the soft butter.
  4. Let the dough rise for 30 minutes on the kitchen table under a damp cloth.
  5. Shape the dough into 8 long sausages (approx. 60 cm) and fold them into pretzels.
  6. Leave the dough to rise for a further 30 minutes on the counter.
  7. Next, boil the pretzels for 1 minute in water with baking soda (approx. 1 tbsp baking soda per litre of water). Bring the water to the boil and carefully lower the pretzels into the water one at a time.
  8. Make sure to drain them well after boiling so that no baking soda foam remains on them.
  9. Place the pretzels on a baking tray lined with baking paper and brush them with egg and sprinkle with flaked salt or sesame seeds.
  10. Bake the pretzels at 180C (fan oven) for approx. 15 minutes.
