Pumpkin Loaf Cake with 01 Spent Grain Flour

Ingredients

200g all purpose flour

20g Agrain 01 Spent Grain flour

2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp ground cloves

1/4 tsp ground ginger

3/4 tsp salt

2 large eggs

100g granulated sugar

100g light or dark brown sugar

1 1/2 cups pumpkin puree (canned or fresh)

1/2 cup (120ml) vegetable oil

Orange juice from 1 orange

Orange zest from 1/2 orange

1/2 cup chopped nuts or chocolate (optional)

Here's how

  1. Preheat the oven to 180C fan. Grease a metal loaf tin and set aside.
  2. In a large bowl, mix the flour, Agrain, baking soda, salt and spices.
  3. In another bowl, whisk together the eggs and sugar. Add the pumpkin, oil and orange juice and zest, and mix.
  4. Pour the wet ingredients into the dry ones and use a spatula or wooden spoon to mix them together until combined. Do not over-mix. The mixture should be thick but still runny. If it is too thick, add a splash more orange juice or milk.
  5. Gently fold in the nuts or chocolate chips, if using.
  6. Pour the batter into a greased loaf tin. Bake for 60-65 minutes, covering with tinfoil half way to prevent the top from browning.
  7. After baking, allow the cake to cool completely before removing from the tin.
  8. Ice the pumpkin with your favourite frosting (we used cream cheese frosting) or enjoy just as it is!
