Banana Muffins with 01 Spent Grain Flour

Ingredients

2 eggs

150 g sugar

1 teaspoon vanilla sugar

170 g wheat flour

30 g 01 Spent Grain Flour

2 teaspoons baking powder

125 g butter

2 ripe bananas

150 g dark chocolate

Here's how

  1. Whisk eggs, sugar, and vanilla sugar until pale and foamy using an electric mixer (ca. 5-7 minutes).
  2. Melt the butter and set it aside.
  3. Mix the flour, 01 Spent Grain Flour and baking powder. Mash the bananas with a fork.
  4. Coarsely chop the dark chocolate.
  5. Combine the flour mixture with the egg mixture along with the melted butter.
  6. Then, stir in the mashed bananas and finally add the coarsely chopped chocolate.
  7. Divide the batter into 12 muffin forms and bake for 17 - 20 minutes at 200 °C.
