Gingerbread cake with 02 IPA Spent Grain Flour

Ingredients

Cake:

80 g sugar

110 g room temperature butter

1 egg

180 g soft brown sugar

1.5 tsp baking powder

1 tsp cinnamon

1 tsp ground ginger

1 tsp cardamom

160 g wheat flour

160 g 02 IPA Spent Grain Flour

1/2 tsp salt

2.5 dl boiling water

Frosting:

150 g cream cheese

75 g icing sugar

A little grated orange zest for the top

Here's how

  1. Preheat the oven to 180 °C.
  2. Whisk the sugar and butter together in a bowl until the mixture becomes fluffy and creamy. Then add the eggs, the soft brown sugar and whisk well.
  3. Mix all the dry ingredients (baking powder, spices, wheat flour, 02 IPA Spent Grain Flour and salt) together in a bowl.
  4. Add the dry mixture to the wet mixture and whisk well until the dough is smooth and uniform.
  5. Add boiling water a little at a time until the mixture is smooth and glossy.
  6. Grease a 22 x 33 cm tin and pour the batter into it.
  7. Bake the cake for approx. 30-35 minutes at 180 °C. You can test if the cake is done by taking a fork and gently inserting it into the cake. If there is no dough on the fork, the cake is done. Cool the cake on a baking tray.
  8. Meanwhile, make the frosting by whisking icing sugar with cream cheese. When the cake has cooled, spread the frosting over the cake.
  9. Add grated orange peel or cinnamon stick on top if desired.
