Biscotti with Ginger, Orange, Dark Chocolate and 03 Spent Grain Flour

Preparation time: 1 hour (including baking time)
Amount: Ca. 20-25 pieces.

Ingredients

150 g wheat flour

60 g 03 Spent Grain Flour

1 teaspoon baking powder

1 tablespoon ground ginger (use 1 teaspoon freshly grated ginger for a more intense ginger flavour)

125 g cane sugar

Zest of one orange (organic)

100 g chopped dark chocolate (70% cocoa)

100 g almonds

3 eggs

Here's how

  1. Mix flour, Agrain 03, baking powder, ginger, sugar, orange zest, chopped chocolate, and whole almonds together in a bowl.
  2. Lightly whisk the eggs in a separate bowl.
  3. Create a well in the flour mixture and add the eggs. Combine the dough and add extra flour if it is a bit too wet.
  4. Shape the dough into a long log (5 cm wide) and place it on a baking tray lined with parchment paper.
  5. Bake for ca. 15 minutes at 170°C (top bottom heat) until it appears fully baked.
  6. Remove from the oven and let it rest for about 10-15 minutes.
  7. Use a sharp knife to cut the cookies into ca. 1.5 cm diagonal slices.
  8. Place the cookies back on the baking tray and bake for another 15 minutes at 150°C. Then, flip the cookies and bake for an additional 15 minutes on the other side.
  9. Allow the cookies to cool completely before placing them in a cookie tin or other storage container.
